Crazy Dragon Pork Dumplings – You choose how many!
4 dried Chinese sausages, roughly chopped
300g green beans, trimmed and roughly chopped
2 spring onions, trimmed and roughly chopped
2 garlic cloves, roughly chopped
2 teaspoons Chinese rice wine (or dry sherry)
2 teaspoons water
1 teaspoon soy sauce
Freshly ground black pepper
Cook green beans in boiling water for 2–3 minutes and drain. Heat a wok (or fry pan) over high heat. Once hot, add Chinese sausage and spring onion, stir for 30 seconds or until sausage is translucent. Add green beans, and garlic, season to taste with salt and black pepper and stir-fry for another 1 minute. Add rice wine and water, stirring until liquid turns to a glaze then remove from heat. Cook dumplings by preferred method per instructions above.
Serve dumplings with stir-fry sausage and beans.
Serve with your preferred dipping sauce: Soy; Dumpling Vinegar; Hoy Sin; Chilli, Sweet Chilli, Etc. Garnish with chopped fresh red chilli for something spicy.
