Crunchy Asian Slaw

This delicious and refreshing salad can be enjoyed on it’s own, or as a side dish to your main meal. Perfectly pairs with Crazy Dragon Prawn Dumplings!

Ingredients

For Salad:

  • ¼ Purple Cabbage 
  • 1 Green Apple
  • 1 Large Carrot
  • 1/3 Cup Roughly Chopped Peanuts 
  • 1 tbsp Toasted Sesame Seeds
  • ¼ Cup of Chopped Coriander  
  • ¼ Cup of Chopped Mint
  • 1 Red Chilli Finely Chopped 

For Dressing:

  • 2tsp Sesame Oil
  • 2 ½ tbsp Soy Sauce
  • ¼ Cup Lemon Juice (or lime)
  • 1 tbsp Extra Virgin Olive Oil 

 

Method:

  1. Finely chop or shred the cabbage until there is about ¾ of a cup. Thinly slice apple and then cut into thin matchsticks. Peel carrot, then shred or cut into thin matchsticks. 
  2. When you’re ready to serve, mix all of the dressing ingredients together and toss through with shredded cabbage, apple, carrot, nuts, toasted sesame seeds and chilli.
  3. Serve, and enjoy!
